Chicken Fry Up: A Healthy Me Recipe

Here I am doing what I said I would never do, but to lose 100 pounds you have to do the never. I will say at the start that I am not a cook, or a food tech, or a specialist. Just a person trying to figure out how to lose the weight without fads.

What I used this time

  • 3 handfuls of dry brown pasta

  • 1 red onion

  • 1 yellow bell pepper

  • teaspoon of ginger and garlic (frozen)

  • Two handfuls of peas (frozen)

  • 1 chicken breast sliced thin

  • Fajita spice mix

  • 2 teaspoons chili powder

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • ¼ teaspoon cayenne pepper

  • ½ teaspoon ground cumin

  • ¼ teaspoon turmeric

  • ¼ teaspoon pepper

  • 2 tablespoons of Mango and Chilli salad dressing from Tesco

How I made it.

  1. Spice the chicken and leave stand a while, dry fry. While frying put three handfuls of pasta to boil. About 15 mins.

  2. Remove the chicken from the pan. Dry fry all the veg in the same pan. Add the chicken back and 1 tablespoon of the mango salad dressing

  3. Add the cooked pasta

  4. Serve and add the remaining dressing.

  5. Remember to include a glass of cool water.

I really enjoyed this and it seems pretty healthy and balanced. I think next time I will add a small salad on the side and possibly some spinach. Any comments or helpful hints please let me know in the comments.
